The default document profile is defined in the preferences: Edit > Options > Default Document Profile
Note that only CMYK icc profiles are supported! (ArtPro+ 18.1)

Color profile behavior when working with Native PDF files
Adobe applications can "tag" a document with a document or working space profile but this profile can only be added to a Native PDF as an output intent (requires an export as PDF/X). ArtPro+ reads this output intent when available!

Color profile behavior when working with ArtPro files
ArtPro doesn't know the concept of a document profile but you can define a CMYK working space profile.
The working space profile is ignored when opening an ArtPro file in ArtPro+, instead the default ArtPro+ document profile is used.

Images inside a Native PDF can be tagged with an ICC profile. Tagged images are detected and supported by ArtPro+!
